How We Build Soil

Every day, leftover vegetables, fruit peels and kitchen scraps from The Palm Restaurant are sorted and composted through a multi-stage process that takes time and attention. A large portion of the restaurant’s organic waste becomes rich compost.
In parallel, dozens of tons of chicken manure are composted carefully throughout the year. Every spring this mature compost is applied across the nearly 2-hectare compound — including the vegetable garden — to feed more than 7,000 trees and plants.

Grass cut across the property is never removed. Local Dao neighbours and our team cut it by hand with machetes, sickles and grass cutters, and leave it in place to decompose — a natural surface mulch that feeds the soil.

No Chemical Pesticides Since the Beginning

From the day we started shaping this land until now, the nearly 2-hectare compound of TVPalm has never received a single drop of chemical pesticide or herbicide. All weeding and grass control is done by hand, by local Dao people and our team.

Water

The garden is irrigated with mountain spring water piped down from 1,250 metres above sea level — the same clean source that feeds our swimming pool.

What Grows Here

• Mustard greens of many kinds, all year round
• Seasonal pumpkins and winter melons
• Various gourds (muop)
• Chayote (su su) that fruits for many months
• Eggplants of different types
• Asparagus
• Cabbage and kohlrabi
• And dozens of culinary herbs

Not everything is grown on site — mushrooms and tomatoes, for example, are sourced from local partners. But the majority of the leafy greens, gourds and herbs on your plate come from this small garden.

A Quiet Regenerative Loop

Kitchen waste becomes compost. Compost becomes soil. Soil grows vegetables. Vegetables return to the kitchen. The cycle continues — slowly, honestly, without chemicals.

This is not a large commercial farm. It is what patient, manual care can do on a mountain slope in Ha Giang.
