At The Palm Restaurant we grow what we can, and carefully source what we cannot. Most of our vegetables and herbs are grown by our own team in The Palm Eco-Garden. We focus on crops that grow well in this mountain climate: cabbage, mustard greens, bitter mustard greens, bok choy, choy sum, eggplant, asparagus, garland chrysanthemum, water spinach, and amaranth greens, along with nearly all our culinary herbs — Thai basil, perilla, Vietnamese coriander, spring onion, lemongrass, garlic chives, culantro, dill, rice paddy herb, and spearmint.
Some ingredients, such as mushrooms and tomatoes, are not grown on site and are sourced from local partners we trust

Meat is supplied by local Dao, H’mong and Tay families in the area. We prioritise free-range animals raised by these families in the traditional way, without industrial methods.
Fish and shrimp are mainly river fish from floating cages on the Lo River in Ha Giang. Availability depends on natural catch and weather, so we cannot guarantee every type of fish every day.

We prefer honesty over perfect numbers. Approximately 78–80% of our vegetables and herbs are grown by our team. The rest is carefully selected. We never claim 100% when it is not true. Every meal follows a simple principle: clean ingredients, light cooking, and respect for the mountain and the people who live here.
If you need different meal times, please arrange directly with TVPalm management in advance. We will do our best to accommodate.
